In fiscal year 2024, saffron was sold at Rs. 166,562.5 a kilogram in the wholesale market, while its average price in the Delhi markets during FY 2015 was Rs. 172,804 a kilogram.
Saffron comes from the stigma and styles of the saffron crocus flower, making its procurement highly labor intensive. As the world’s costliest spice, high prices across Indian spice markets were not surprising. Kashmiri saffron was distinctive for its dark color, strong flavor, and aroma compared to other parts of the world.
